Avocados, preferably Haas
½ bunch Fresh cilantro leaves, chopped
½ small Red onion, finely chopped
Jalapeno chiles, stemmed, seeded and Finely Diced
1 medium Tomato, seeded and finely Diced
Lime, juiced
4 tablespoons Olive oil
1 teaspoon Coarse salt
½ teaspoon Black pepper, freshly ground

Cut the avocados into quarters. Remove the seeds, peel and place in a mixing bowl. Mash with a potato masher or fork. Add the remaining ingredients and beat with a fork to mix thoroughly.
