avocado and pine nut salad - bon appetit

Bon appetit
4 servings
Head lettuce, torn into bite-size pieces
Avocado, peeled, pitted and chopped
Tomato, chopped
⅓ cup Pine nuts, toasted
¼ cup Alfalfa sprouts
¼ cup Minced red onion
¼ cup Grated mozzarella
2 tablespoons White wine vinegar
1½ tablespoon Dijon mustard
6 tablespoons Olive oil
  Salt and pepper

Place lettuce in large bowl. Add avocado and next 5 ingredients.

Whisk vinegar and mustard in small bowl. Gradually whisk in oil.

Season with salt and pepper. Pour ⅓ C dressing over salad and toss.

Serve, passing remaining dressing.
