Measure | Ingredient |

1 tablespoon | Vegetable oil |
⅓ cup | Chopped onions |
1 cup | Uncooked brown rice |
3 cups | Chicken stock |
¼ teaspoon | Ground cumin |
1 tablespoon | Tomato paste |
¼ cup | Dried lentils |
1 cup | Chicken; cooked and chopped |
½ cup | Shredded carrots |
½ cup | Unsalted sunflower seeds |
½ cup | Raisins |
Heat oil in skillet until hot. Saute onions until tender. Add rice and stir until lightly browned. Add chicken stock and next 3 ingredients; stir well.
Cover, bring to a boil, reduce heat, simmer 30 minutes. Stir in chicken, carrots, sunflower seeds, and raisins. Cover and cook 10-15 minutes or until all liquid is absorbed. Serves 6.
