|½ cup||Mayonnaise or salad dressing|
|2 teaspoons||To 3 tspn curry powder|
|1½ teaspoon||Lemon juice|
|1 pounds||Fresh asparagus spears -OR-|
|2 eaches||10-oz packages frozen asparagus spears; thawed|
Combine first 3 ingredients; cover and chill.
Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired. Cook asparagus, covered, in a small amount of boiling water 6 to 8 minutes or until crisp-tender; drain.
Arrange asparagus spears on a serving platter; top with curry sauce, and sprinkle with capers. Yield: 4 servings.
