asparagus with curry sauce - sl 1/90

MeasureIngredient
½ cup Mayonnaise or salad dressing
2 teaspoons To 3 tspn curry powder
1½ teaspoon Lemon juice
1 pounds Fresh asparagus spears -OR-
2 eaches 10-oz packages frozen asparagus spears; thawed
2 tablespoons Capers

Combine first 3 ingredients; cover and chill.

Snap off tough ends of asparagus; remove scales with a knife or vegetable peeler, if desired. Cook asparagus, covered, in a small amount of boiling water 6 to 8 minutes or until crisp-tender; drain.

Arrange asparagus spears on a serving platter; top with curry sauce, and sprinkle with capers. Yield: 4 servings.
