1 can (14-oz) artichoke hearts; drained and quartered
1 pounds Longhorn or Rat cheese; grated
Eggs; beaten

Place artichokes on the bottom of a greased 8x8 pan. Top with cheese. Pour beaten eggs over cheese. Bake at 350ΓΈ for 45 minutes. Yield: 6 to 8 servings.
