apricot-ginger butter - bon appetit

Bon appetit
2 cups
2 cups Coarsely chopped dried apricots (about 1/2 lb)
1 cup Orange juice
½ cup Water
1½ tablespoon Chopped peeled fresh ginger
2 tablespoons Honey
2 tablespoons (or more) sugar

Combine chopped dried apricots, orange juice, ½ C water and chopped fresh ginger in heavy medium saucepan. Cover tightly and simmer until liquid is reduced by half and apricots are very tender, stirring frequently, about 20 minutes. Puree apricot mixture in processor until smooth. Mix in 2 T honey and 2 T sugar. Season butter to taste with more sugar, if desired. Transfer butter to bowl and cool completely. (Butter can be made 1 week ahead. Cover tightly and refrigerate.)
