Apple puffed pancake

Yield: 4 Servings

Measure Ingredient
6 \N Eggs
1½ cup Milk
1 cup Flour
3 tablespoons Sugar
1 teaspoon Vanilla
1 teaspoon Cinnamon
½ cup Butter or margarine; melted
2 \N Apples; peeled and sliced
3 tablespoons Brown sugar
1 teaspoon Salt

PREHEAT OVEN 425. MIX EGGS, MILK FLOUR , SUGAR, VANILLA, SALT AND CINNAMON IN BLENDER UNTIL WELL BLENDED. MELT BUTTER IN 13X9X2 INCH PAN IN OVEN. PUT APPLE SLICES IN PAN . RETURN TO OVEN. WHEN BUTTER SIZZLES, DO NOT LET BROWN, REMOVE DISH FROM OVEN. POUR BATTER OVER APPLES. SPRINKLE WITH BROWN SUGAR. BAKE ON MIDDLE RACK OF OVEN FOR 20 MINUTES OR UNTIL PUFFED AND BROWNED.

NOTES : Bobbie's Notes: Recipe can be cut in half using 8 or 9 inch square baking dish. If using 8 inch dish, may need to cook about 35 minutes to cook through and brown.
