apple cranberry bars

1 cup Margarine -- softened
2 cups Apples -- peeled/chopped
1 cup Cranberries -- chopped
Egg whites -- whipped
2 teaspoons Orange peel -- grated
2 teaspoons Vanilla
2¼ cup Unbleached flour
1½ cup Granulated sugar
1 teaspoon Baking soda
¼ teaspoon Salt
⅓ cup Margarine -- softened
3 ounces Fat-free cream cheese --
  Softened
1 teaspoon Vanilla
2 cups Powdered sugar --sifted
1 teaspoon Orange peel -- grated
4 teaspoons Skim milk -- at room
  Temperature

TOPPING

Preheat oven to 350 degrees. Prepare a 15 x 10 x 1" jelly roll pan with cooking spray and flour. In a mixing bowl, combine the margarine, apples, cranberries, egg whites, orange peel and vanilla.

In another mixing bowl, combine flour, baking soda and salt. Mix dry ingredients with wet ingredients just until moistened. Spread mixture into prepared pan. Bake for 30 to 35 minutes. Meanwhile, to prepare topping, combine the margarine, cream cheese, vanilla, orange peel, and milk. Top when bars have cooled.
