Let milk come to a boil. Beat sugar and yolks of eggs well and stir into milk. Add a pinch of salt and continue stirring to prevent curdling.
When cool, add vanilla. Before serving, beat the egg whites to a stiff froth with ½ cup sugar. Fold in the grated apples. Drop by spoonful on custard.
