|4 larges||Sweet red peppers|
|1 can||(2-oz) flat anchovy fillets|
1. Heat broiler. Quarter and seed peppers. Arrange peppers, skin side up, on broiler pan. Broil, 4 inches from heat, until well blackened-10 to 12 minutes.
2. With tongs, remove peppers from broiler pan and plunge into a bowl of ice water. Remove one at a time. With sharp knife, peel off blackened skins. Pat peppers dry with paper towels.
3. Place peppers in small bowl as they are peeled and dried. Add anchovies and their oil to peppers. Toss to coat peppers with oil.
Cover bowl tightly (or pack into a crock, if desired) and refrigerate at least 2 flours before serving.
