Anchoïade

Yield: 12 Servings

Measure Ingredient
6 \N Basil leafs
150 grams Anchovies; 5 oz
2 decilitres Olive oil
\N \N Peanut oil
6 \N Garlic cloves; peeled
3 tablespoons Vinegar
\N \N Water; if needed

Wash anchovies to remove salt. Place enchovies, garlic and basil in a small food processor. Process adding oil as for mayonnaise. Add vinegar and process ½ minute. If too thick add a little water. Chill Based on Barbara Kafka's " Party Foods" NOTES : Great with toasts or crudites.
