Adrak sharbat (lime ginger ale)

30 grams Peeled ginger root - 1 oz
5 millilitres Peppercorns - 1 t
500 millilitres Water - 1 pt
500 millilitres More water - 1 pt
500 grams Sugar - 18 oz
12 \N Limes; juice of
1 litre Water or sparkling water - 1 qt

Make a paste of the ginger. Add this paste and the peppercorns to 500 mL water. Bring to a boil, reduce heat, simmer 5 min. Strain. Set liquid aside and put solids back in the pan with more water. Bring to a boil, reduce heat, simmer 5 min. Strain. Discard solids. Combine both liquids together with sugar and lime juice. Chill.

To serve, dilute with an equal quantity of still or sparkling water and serve over ice.
