1 each cup all purpose flour
  cup regular or quick cooking oats
2 teaspoons Baking powder
  tsp. baking soda
1 teaspoon Cinnamon
⅓ cup Packed brown sugar
  cup safflower oil
1 each Egg
1 each Tart-sweet cooking apple such as Granny Smith, peeled & shredded
1 medium Zucchini, grated
1 each Preheat the oven to 375F. Liine a muffin tin with paper baking cups.
2 eaches In a medium bowl, combine the flour, oats, powder, soda and cinnamon.
3 eaches In a large bowl, combine the brown sugar, oil and egg. Whisk until

well blended. Stir in the apple and zucchini. Add all at once to the dry ingredients. Stir only to moistened;the batter should be slightly lumpy. 4. Spoon the batter evenly into the prepared pan. Bake 20-25 minutes. Remove the muffins from the tin and cool on a wire rack.
