¼ cup | Oil (Crisco, Wesson, etc., but NOT olive oil) |
1 large | Bell pepper |
1 large | Onion |
2 \N | Cloves garlic |
16 ounces | Can tomato sauce |
½ \N | To 1 tsp. salt |
1 tablespoon | Chili powder (minimum) |
1 ounce | Sq. baking chocolate |
¼ teaspoon | Pepper |
Skin chicken and brown lightly in oil. Remove chicken. Coarsely chop peppers and onion, mince garlic, and cook in oil until onion becomes translucent. Add tomato sauce and salt. Add seasonings and chocolate. Stir until chocolate is melted, add chicken, and simmer on low heat until chicken is very tender. Remove and discard bones.
Adjust seasonings to taste. Serve over rice or noodles.
