To 3 1/2 lb chicken, cut up
½ cup Seasoned flour
½ cup Melted butter or oleo
½ cup Chopped onion
Garlic cloves, crushed
2 tablespoons Oil (olive oil preferred)
1 teaspoon Salt
1 teaspoon Oregano
⅓ cup Grated Parmesan cheese
½ teaspoon Basil
¼ teaspoon Pepper
1 tablespoon Parsley
15 ounces Tomato sauce

SAUCE

Dredge chicken in seasoned flour. Place in 13x9x2-inch pan in which butter has been melted. Bake in very hot oven (450 degrees) 30-40 minutes. Meanwhile, saute onion and garlic in oil in small pan until soft but not brown. Stir tomato sauce and spice into sauce mixture.

Boil gently, uncovered, 15 minutes. Remove chicken from oven; reduce heat to moderate (350 degrees). Turn chicken over and top with sauce and ⅓ cup Parmesan cheese. Return to oven; bake 30 minutes or until chicken is tender. Submitted By BARRY WEINSTEIN On 03-03-95
