1 cup | Cauliflower; small pieces |
½ cup | Broccoli; small pieces |
½ cup | Roasted red peppers; 1/2\" dice |
½ cup | Capers |
1½ cup | Feta cheese; crumbled |
¼ cup | Fresh grated parmesan cheese |
4 \N | Cloves garlic; minced |
¾ cup | Extra virgin olive oil |
¼ cup | Red wine vinegar |
1½ tablespoon | Capers |
1 tablespoon | Liquid from capers |
¼ cup | Lemon juice |
¼ teaspoon | Fresh ground pepper |
1 teaspoon | Salt |
MAGIC SALAD DRESSING
submitted by: cathlin@... (Cathlin Bennett, Corvallis, Oregon) Combine all salad ingredients except parmesan cheese. In a blender mix all dressing ingredients. Pour dressing over salad and toss carefully, adding parmesan.
